Recipe: Kaiserschmarrn

Kaiserschmarrn (also called Kaiserschmarren) is one of the most famous desserts in Austrian cuisine. The Bulls' Corner chef reveals his special recipe. Good luck!

Ingredients for 2 persons

  • 4 eggs
  • 40g sugar
  • 140g smooth flour
  • 250g or ¼ litre of milk
  • 50g butter
  • 1 pinch of salt
  • 1 pinch of vanilla sugar  
  • Icing sugar for sprinkling

Preparation

  • Preheat the oven to 190 ° C (top / bottom heat)
  • Separate eggs
  • Mix the yolk, milk, flour and salt into a smooth dough
  • Beat the egg whites and sugar until stiff and add carefully to the dough
  • Heat half the butter in a pan (30cm in diameter)
  • Pour in the dough and bake in a preheated oven for about 12 minutes until golden brown
  • Remove from the oven and cut with 2 spoons
  • Caramelise lightly in the pan with the remaining butter and a pinch of vanilla sugar

Serving

  • Arrange on 2 plates or in 2 small iron pans
  • Sprinkle with icing sugar
  • We recommend enjoying the Kaiserschmarrn with apple sauce or stewed plums :-)
  • If you’d like, you can also add raisins - just sprinkle a handful over the dough in the pan before putting it into the oven.
